I read some recipes for quick pickled vegetables in a newspaper at work last week. It took me a bit to track it down this week, but it was an article in the Tacoma News Tribune. After printing it out, I looked up other pickle recipes online.
My idea was to make some pickled stuff that I could use in part of a bento lunch -- it's been a while since I tried making bento lunches, but I've always used pickles when I do make them. So... after work, I went walking, I picked a bunch more blackberries, then I went to the store and picked up veggies and stuff.
Once I got home (6:00 PM -- 3 hours after I get off work) I set about making pickled radishes. I went the fast route and instead of salting them for a couple of hours I blanched them in hot water on the stove -- actually I more cooked them than just blanched them, so we'll see how that goes. Then I used mustard seed, black pepper, rice vinegar, splenda, water, and some dried peppers and garlic cloves, and put it all in a glass bowl with a rubber lid. I don't have any canning jars and I couldn't find anything at Fred Meyers to work, and you're supposed to use a "non-interactive" container... well, the rubber lid is interactive I suppose, but much better than anything else I had.
Then I made some more with green beans.
My other plan was to make another batch with some carrots, celery, onions and stuff... but by that point it was after 7 PM and I decided I was doine for the evening.
The rest of my plan also got set aside for a day. That was to make brown rice, cook some chicken with onions and bell peppers, and make some sort of macaroni salad with whole wheat pasta, celery, cucumber, and saffola or whatever that fake mayonaise I have is called. You know, lunch stuff.
Guess that's still on schedule for Thursday and Friday. I made a sandwich for tomorrow, which is a lot like what I had for lunch yesterday and today. Exactly like, in fact. And blackberry cobbler, which I also had yesterday and today.
