I Am Potluck Man!
Jun. 23rd, 2006 11:32 amThursdays are Chilicothe day at work, the day we get tons of Kenworth freight for consolidation to Chilicothe. E and D have taken to calling it "Chili Day", which made me wonder, where's the chili?
Mmmmm... chili... /drool.
So I made chili for yesterday. I typed "chili recipe" into Google and took notes from a bunch of recipes, then went to the store. What I did Wednesday night is placed 1 lb of cubed beef and 1 lb of cubed pork into my crock pot, along with a Guinness Extra Stout, some lime juice, a beef bullion cube, and eventually a package of chili seasonings. Then into a large plastic container I place a can of red kidney beans and a can of black beans (drained), a can of stewed tomatos and a small can of tomato paste, a red bell pepper and an orange bell pepper, two anaheim peppers, and a jalapeno pepper (all deseeded and finely diced), a yellow onion (finely diced), a couple of small cloves of crushed garlic, a little mustard, some cumin, some oregano, a little garlic salt (I didn't have any garlic powder or paprika, but I'd already added the chili seasonings anyway), some salt and pepper.
I made cornbread too. ^_^
In the morning I turned off the crock pot and placed the meat into another plastic container and took it all to work, where I dumped the meat & juice back into the pot, then added all the other stuff I'd prepared the night before. Then I let it cook all afternoon.
It was very very good. ^_^ Lots of flavor and not very spicy (S can't stand spicy food, and E doesn't like garlic if she can taste it). E brought some diced sweet onion and grated cheese. C brought some rolls that she baked and churros for desert.
