Today's accomplishment, aside from getting in my walk and eating breakfast and getting to work on time, is making lunch. I'm very sporadic about making something to take to work for lunch. I'd planned to do this yesterday, but after showering and eating breakfast there wasn't enough time. So today I did it before showering.
What I did -- I'd seen a recipe that looked good, a tunafish mix that included celery, cashews, and zuccinni. (However you spell that). And I bought the ingredients at the store, and came home, and looked up the recipe yesterday... and I guess the recipe I'd seen was in the newspaper or something because the one I thought it was was a different tunafish recipe (in a magazing I bought recently about Diabetes) which was a Mediterranean tunafish mix -- tunafish, red wine vinegar, olive oil, parsley, red onion, minced garlic, on a hard roll with lettuce and tomato. What I did instead was mix the tunafish, vinegar, olive oil and some garlic salt with chopped celery, zuccinni, chopped cashews, green onion, and some caroway seeds just because I like those. ^_^ And I'll take it to work and stuff it into some pita bread! Lunch!
I bought some stash double spice chai tea recently and I've been having that at work. Yum!
